Almond and Egg Biscuits

  • 4.58 ounces (130 grams) sugar
  • 1 egg
  • 2.46 ounces (70 grams) butter (at room temperature)
  • 2.11 ounces (60 grams) ground unpeeled almond
  • 8.8 ounces (250 grams) flour
  • Flour to powder
  • 2 teacups egg yolks cream
  • Butter to grease

How to make Almond and Egg Biscuits

  • Start by mixing the sugar, the butter and the egg very well. Then, gradually add the flour and make sure you don’t stop stirring the mix. Gradually add the ground almond and mix it very well with the rest of the ingredients. Place the mix in the fridge and leave it there for about 15 minutes.
  • Meanwhile, turn the oven on at 350ºF (180º C).
  • Powder a smooth surface with flour and spread the dough in it until it is thin. Cut the dough with a biscuit mould. In half of the cookies, cut the middle in order to shape them like rings.
  • Put the rings on top of the whole biscuits and paste them together with a little water.
  • Grease a baking tray with butter and powder it with flour. Place the biscuits in it. The centre of the biscuits should be filled with the mix you placed in the fridge earlier. Put what is left on the side.
  • Place the biscuits in the pre-heated oven for about 12 minutes.
  • When this time is up, remove them from the oven and from the tray. When they’re cool, put the rest of the egg mix on top of them and powder them with powdered sugar.
