  • 17 ounces (500 grams) sugar
  • 8.25 fl. oz (1/4 litres) of water
  • 3.5 ounces (100 grams) toasted biscuits
  • 1 teacup of milk
  • 4 eggs

How to make Biscuit Mousse:

  • Start by mixing 17 ounces of sugar with 8.25 fl. oz (1/4 litres) of water and place it in medium heat for about four minutes. Remove it from heat afterwards.
  • Moist and crush the cookies in hot milk, add it to the sugared water and place it on heat. Stir it continuously until it thickens (it should take about 5 minutes after it starts boiling).
  • After 5 minutes, remove it from heat and let it cool enough to add 4 egg yolks. Then, place it on heat again for a few more minutes and stir it continuously.
  • Remove from heat when it thickens.
  • Whip the egg whites stiff and then add two spoons of sugar. Mix everything until the egg whites are incorporated.
  • Pour the mix into a bowl and put it in the fridge.
