  • Salt and pepper to your taste
  • 2 medium sized eggplants
  • 2 eggs
  • Flour to powder
  • 8 thin slices of bacon
  • Breadcrumbs to powder
  • Ketchup to your taste
  • Oil to fry

How to make Breaded Eggplants with Bacon:

  • Start by washing the eggplants and removing their stem. Cut the eggplants into long strips and parboil them in boiling water seasoned with salt for 30 seconds.
  • Then, drain them and, after they cool a little, season them with pepper.
  • Next, powder the eggplant slices with flour, dip them in beaten eggs and, lastly, powder them with breadcrumbs.
