Bunny Biscuits RecipeThere are many gastronomical traditions in Easter time and Bunny Biscuits are one of them. This recipe also changes from region to region.

Children are usually interested in participating in the process of baking, so this Bunny Biscuits recipe will surely be a great way of getting them involved and they will be very excited.

The Bunny Biscuits tradition originated in Germany, but it has now been adopted by other countries.

Ingredients for the dough:

  • 2.11 ounces (60 grams) butter
  • 5.29 ounces (150 grams) powdered sugar
  • 3 egg yolks
  • 1 dessert spoon vanilla sugar
  • 3 tablespoons milk
  • 8.8 ounces (250 grams) plain flour
  • Butter and flour for the baking tray

Ingredients for the royal icing

  • 1 egg white
  • 7 ounces (200 grams) powdered sugar

Ingredients for the decoration

  • Blue and red colouring to your taste
  • 1.7 ounces (50 grams) chocolate

Start by kneading the sugar and the butter. Then, add the egg yolks and keep kneading. Add the milk and the vanilla sugar and keep kneading. Add some flour to the dough so that you can mould the dough more easily. Once you finish this process, put the dough in the fridge for about 20 minutes.

Meanwhile, turn the oven on at 350ºF (180ºC). While the oven is heating, spread the dough in a smooth surface powdered with flour. Make sure you spread it well and until it becomes thin. Using a bunny shaped mould (you can make it out of cardboard) cut pieces out of the dough.

Grease a baking tray with butter and powder it with flour. Place the bunny shaped pieces of dough in it and then put the tray in the oven for about 12 minutes. Once the biscuits are tepid, remove them from the tray and wait until they cool.

Now it’s time to make the royal icing. Start by mixing the powdered sugar with the egg white very well until you get a thick and shinning white cream. Then, remove two tablespoons of the mix into a separate bowl and other two tablespoons into yet another bowl. Cover the royal icing that is left with a wet cloth. Add the blue colouring to one of the royal icing bowls and the red colouring to the other. Try to get the colour you want.

Meanwhile, pour the rest of the royal icing in a cartridge made out of greaseproof paper. Use it to cover one of the halves of the biscuits. Wait until it dries.

Melt the chocolate in a water bath and then pour it into the cartridge.

To decorate the cookies, draw the details of the bunnies’ faces with the chocolate and the coloured royal icing. Wait until they dry and they’re ready.
