Cake Roll with Carrot Jam

Cake Roll with Carrot JamCarrot jam cake it’s a great dessert and it can be included in your party’s menu or even in your afternoon tea.

To bake this cake, you will need another recipe, Carrot Jam, but you can also use other jams to diversify your choice of flavours and increase your cake options.

  • 7 tablespoons (5.5 ounces / 100 grams) of sugar
  • 5 tablespoons  (2.5 ounces / 70 grams) of wheat flour
  • Powdered sugar
  • 3 eggs
  • 2 yolks
  • Grated peels of lemon or orange
  • Margarine to grease the greaseproof paper

How to make Cake Roll with Carrot Jam:

  • In order to start this recipe, you will need a sheet pan lined with greaseproof paper. The top side of the paper should be greased with margarine.
  • Start by mixing the eggs, the yolks, the grated lemon peels and the sugar very well until they form a fluffy cream.
  • After the fluffy cream is made, add the flour by letting it slip through your fingers like rain. Use your other hand to stir the cream very carefully until the flour merges with the cream.
  • Put the dough in the sheet pan and smooth it until it forms a thin layer.
  • Put it in a very hot oven for 12 to 15 minutes.
  • When the dough is cooked, tip the sheet pan carefully over a cloth sprinkled with sugar.
  • Remove the paper carefully and spread a layer of carrot jam over the cake.
  • Roll it very well using the cloth to help you.
  • Trim the ends of the cake and spread jam on them as well. Sprinkle the cake with powdered sugar.

Cake tips:

You should always use thin sheet pans to bake cakes and they should preferably be made out of aluminium so that the cake bakes quickly on top and it doesn’t dry out. This way the cake doesn’t crack when you roll it.
You should always bake the cake in a very hot oven.

To make sure the cake is baked, you can touch it with your fingers to check if the dough is raw, or you can use a toothpick.

As soon as the cake is baked, you should take it out of the oven immediately.
