How to make Caramel Cake Coated with Walnuts:

  • Start this recipe by burning 1 cup (7.94 ounces / 225 grams) of sugar. Add boiling milk until the sugar melts. Let it cool.
  • Meanwhile, mix the butter with the remaining 1 cup and 4 tablespoons (9.7 ounces / 275 grams) of sugar and egg yolks until they turn into a cream. Then, add the caramel, the flour, the backing powder and mix everything again.
  • Whip the egg whites and wrap them on the mixture you have prepared. Mix it all very well and put it in a preheated oven at 360oF (180oC ) for around 25 minutes.
  • As for the cake’s coating, start by putting 1.1 pound (500 grams) of sugar in a pan and heat it until it caramelizes (in low heat).
  • Then, add the 2 and 1/5 cups  (16.5 fl. oz / 500 ml) of milk and let it boil until the sugar melts. Meanwhile, add a tablespoon of butter and one and a half teacups of chopped walnuts. Let it boil until it forms a fine thread.

Don’t add the coating before the cake is cold.
