Carrot Cake

CarrotCake-zrThis Carrot Cake recipe is a little different from the usual one and it’s more appropriate for special occasions!

Try it and you won’t regret it. It is a true delight.

Ingredients for the dough:

  • 8.8 ounces (250 grams) brown sugar
  • 6 eggs
  • 9.87 ounces (280 grams) flour
  • 5.29 ounces (150 grams) grated carrot
  • Butter to grease
  • Flour to powder

Ingredients for the filling:

  • 2 teacups pumpkin jam
  • 4 colourless jelly leaves
  • 2.11 ounces (60 grams) walnut inside
  • Egg yolks cream to your taste
  • 4 decilitres cream

Ingredients for the frosting:

  • 3 tablespoons sugar
  • 2 egg whites

How to make Carrot Cake:

  • Start this Carrot Cake recipe by turning the oven on at 350ºF (180ºC). Meanwhile, mix the egg yolks with the sugar and the butter and then add the grated carrot and the flour.
  • Grease a round baking mould with butter and powder it with sugar (the mould should be about 7.8 inches – 20 centimetres wide).
  • Pour the dough in the mould and place the mould in the oven for about 50 minutes. Once it’s cooked, make sure you unmould the cake while it is still tepid.
  • For the filling, place the jelly leaves in cold water and then heat them in a water bath until they dissolve. Then, mix the dissolved leaves with the pumpkin jam and the grinded walnut insides.
  • Next, beat the cream until it turns stiff and add it to the previous mix.
  • Now, cut the cake in three parts (horizontally) and then cut those parts with the same size as the ring you are going to use.
  • For the frosting, beat the egg white stiff and add the sugar until the mix turns consistent and shiny.
  • Now it’s time to “build the cake”, that is, you should make alternate layers of cake and cream, but you should always finish with the crème.
  • Once this is done, place the cake in the freezer and, when it is time to serve it, spread the egg yolks cream on top and decorate the cake with the frosting. Put the cake in the oven to gratin and then decorate it to your taste.
