  • 42.3 ounces (1.2 kilos) chicken
  • 35 ounces (1 kilo) chestnuts
  • 3.5 ounces (100 grams) smoked pork sausage
  • 17.6 ounces (500 grams) small potatoes
  • 1 medium sized onion cut into wedges
  • 8 chives
  • 1 decilitre of white wine
  • 3.5 ounces (100 grams) lard
  • 1 teaspoon ground pepper
  • 3 garlic cloves
  • Olives to decorate
  • Bunches of parsley or coriander to decorate

How to make Chicken with Chestnuts:

  • Start by crushing the garlic and mixing it with salt, lard and pepper until you get a sort of cream.
  • Spread that cream over the chicken. You can put some of the cream inside the chicken.
  • Then, peel the potatoes and the chives and put them, along with the chicken in a very hot oven for about 40 minutes.
  • While the chicken is in the oven, sprinkle it with the roast sauce and white wine.
  • You should turn the chicken occasionally so that all sides are well cooked.
  • Towards the end, the breast part should be the one showing, because it looks better that way. Don’t forget to sprinkle the potatoes and the chives with sauce and white wine as well.
  • Meanwhile, start preparing the chestnuts by making a small cut on their side in a way that will guarantee that their skin is really cut.
  • Fry the chestnuts in oil for 10 minutes and then peel them.
  • Cut the raw smoked pork sausage in circles and braise them slightly in a pan with margarine or fat from the roasted chicken.
  • Mix the chestnuts and the sausage so that both ingredients acquire taste and heat a little.
  • Lastly, put the chicken in a serving dish, sprinkle it with the sauce where it roasted and decorate your dish with parsley or coriander bunches.
  • Place the potatoes, the chives and the chestnuts around the chicken.
