Chicken Rice with Red Wine

  • 28.12 ounces (800 grams) chicken breast
  • 1 medium sized onion (chopped)
  • 50 millilitres oil
  • 3.5 ounces (100 grams) carrots
  • 2 garlic cloves (chopped)
  • 5.29 ounces (150 grams) bacon
  • 1.5 decilitres red wine
  • 10.5 ounces (300 grams) rice
  • 5 decilitres water
  • 1.76 ounces (50 grams) grated edam cheese
  • Salt and pepper to your taste

How to make Chicken Rice with Red Wine

  1. Start by cutting the chicken into pieces, then add salt, chopped onion, white pepper in grains, bay leaf, carrot – cut into circles –, chopped garlic and a bunch of herbs (we suggest leek, thyme or a bunch of parsley). Sprinkle everything with red wine and leave it for a few hours.
  2. When this time is up, start the proper cooking.
  3. Braise the chicken in oil, then add the onion, the garlic and the bacon, all chopped into tiny rectangles and braise them along with the chicken.
  4. Once this is done, sprinkle the mix with red wine, season it with salt and pepper and cover the pan.
  5. Cook for about 5 minutes and then add water. Cook for another 10 minutes.
  6. Now, add the rice to the mix and cook for about 10 minutes. When this time is up, put the rice and chicken in a baking tray and powder it with the grated cheese. Place it in the oven to gratin.
  7. Serve it while it’s hot.
