Codfish Soufflé

  • 1/2 teacup flour
  • 1 teacup milk
  • 2 tablespoons butter
  • 1 teaspoon nutmeg
  • 10.5 ounces (300 grams) desalted shredded cod
  • 6 eggs
  • ½ teaspoon ground black pepper
  • Margarine to grease

How to make Codfish Soufflé:

  • Start by heating the butter in a pan until it melts.
  • Then, gradually add the flour and mix it very well with the butter.
  • Add the milk and, with a wooden spoon, stir all the ingredients until they are mixed.
  • Then, add the shredded cod, the nutmeg and the ground black pepper.
  • Stir everything very well until the mixture is dense. Then, wait until it cools.
  • When the mixture is cold, it’s time to add the egg yolks.
  • Then, whip the egg whites stiff and add it with the rest of the mixture carefully.
  • Grease a baking pan with margarine and then pour the mixture in it.
  • Put it in the oven at 325ºF (170ºC) and leave it there for 30 to 40 minutes.
  • When the soufflé gains form, raise the oven temperature until the soufflé gains a golden colour.
