Codfish with Smoked Ham

  • 4 cuts of soaked codfish
  • 50 millilitres olive oil
  • 7 ounces (200 grams) sliced smoked ham
  • 28.2 ounces (800 grams) small potatoes
  • 1 decilitre white wine
  • 3 small onions
  • 1 bunch of coriander
  • Salt to your taste

How to make Codfish with Smoked Ham:

  • Start by removing the codfish spine carefully so that the cuts are not damaged.
  • Then, cut the codfish cuts in half and place one or two slices of smoked ham in the middle. Tie the slices with kitchen twine and cook them slightly in olive oil. Meanwhile, turn the oven on at 350ºF (180ºC).
  • Wash and peel the potatoes, cut the onions in haf and add these ingredients to the codfish.
  • Season the ingredients with salt and white wine. Place the baking tray with all the ingredients in the oven for about 30 minutes. While the ingredients are in the oven, sprinkle them with the sauce where they are soaking every once in a while.
  • When you are removing the codfish from the oven, powder it with the coriander.

Can you recognize true codfish?

Well, true codfish is large and tall and its cuttings are quite thick. Its colour is completely white, if its colour is a little more yellow, then it is another species. Its tail must be almost straight or slightly curved. The skin of true codfish has a cream tone.
