Endive and Egg Salad

Endive-Egg-Salad-zrEndive is a vegetable from the chicory family. Usually, it is boiled or added raw to salads.

One of the great qualities of endive is that it has many vitamins and minerals, but it is also a great source of fibre.

Endives are easily mistaken with lettuce, they usually taste sweet, are crunchy and very fresh.

Ingredients:

  • 2 endives
  • 4 eggs
  • 1 coffee spoon black roes
  • 1 bunch of watercress
  • 1 coffee spoon red roes
  • 1 reddish
  • Salt to your taste

How to make Endive and Egg Salad:

  • Start by boiling the eggs in water seasoned with salt for about 10 minutes. When the eggs are cooked, peel them and cut them into circles.
  • Now that the eggs are ready, remove the endives’ root and separate all the leaves that have the same size. Cut the other leaves into small pieces.
  • Meanwhile, start washing the watercress and separate it into small bunches, then arrange them in the dish you are going to use to serve the salad.
  • Place the whole endives on top of the watercress, then the cut leaves and, lastly, the egg circles.
  • The roes should be spread in the centre of the eggs.

Use the reddish to decorate.
