  • 1/4 cup (1.8 ounces / 50 grams) of raisins
  • Greaseproof paper to line the baking pan
  • Margarine to grease the paper and the baking pan
  • 1/2 cup (4.3 ounces / 120 grams) of margarine
  • 1/2 (4.4 ounces /130 grams) of sugar
  • 1/2 a glass of brandy or rum
  • 3 eggs
  • Grated orange peels and juice from half a small orange
  • 1 dessert spoon of baking powder
  • 1 cup (7 ounces / 200 grams) of wheat flour
  • 2/3 cup (5.2 ounces / 150 grams) of preserved fruit

How to make English Fruit Cake:

  • Start by kneading the margarine and the sugar very well until you get a cream.
  • Then, add the eggs and, while continuing to knead, gradually add the grated orange peels and juice, the brandy or rum, the flour with backing powder and, lastly, the preserved fruit, after dipping it in flour.
  • After powdering the backing pan with flour, pour the dough you made in there and spread it.
  • Put the backing pan in the oven at medium temperature for 40 to 50 minutes.

The English Fruit Cake is typically used in afternoon teas and breakfasts.
