Fish VelouteThis Fish Velouté recipe is not hard to make and it’s a great way of cooking fish because it looks like you’re eating a nice soup!

Fish is a very nutritious food and it should enter your diet at least twice a week. It is rich in hugh quality proteins and it generally has less fat than red meat.


  • 12.3 ounces (350 grams) spineless red fish
  • 1 onion
  • 1.76 ounces (50 grams) butter
  • 2 tablespoons flour
  • 1 litre of water
  • 1 bunch of coriander
  • 1 bunch of chives
  • 2 decilitres of cream
  • Chives to decorate
  • Salt to your taste

How to make Fish Velouté

  • Start by preparing the fish. Remove all its spine and skin and put it on the side.
  • Meanwhile, peel the onion and cut it into pieces. Place a frying pan on heat with butter on the bottom and braise the onion a little in it.
  • Then, add the flour the mix it very well with the onion and butter.
  • Add the water, season it with salt and then add the fish you had on the side. Cook for about 15 minutes.
  • After this time, add the coriander, the chives and the cream. Grind all the ingredients very well and serve the soup decorated with chives.
