Fried Almond CakesThe Fried Almond Cakes (Azevias) are a much appreciated sweet, especially during the Christmas season since they are a traditional dessert.

Ingredients for the Filling:

  • 7 ounces (200 grams) ground almonds (optional)
  • 4 eggs
  • 1 lemon peel
  • 1 cinnamon stick
  • 2.2 pounds (1 kilo) sugar
  • 2.2 pounds (1 kilo) cooked chickpeas

Ingredients for the dough:

  • 1 egg
  • Firewater to your taste
  • Salt to your taste
  • 17.6 ounces (500 grams) water
  • 10.5 ounces (300 grams) lard
  • 2.2 pounds (1 kilo) plain flour

How to make Azevias:

  • Start by peeling the chickpeas. Then heat a pan with the chickpeas, the sugar, the lemon peel and the cinnamon stick for about 1 hour.
  • Stir all the ingredients very well so they don’t stick to the bottom of the pan.
  • Remove the pan from heat and add the egg yolks and the ground almonds (optional). Then, place the pan on heat again to cook the egg yolks. After this, remove the pan from heat and, when the mix cools, your filling is ready.
  • For the dough, knead the flour and the lard until these ingredients are mixed. Add water, the egg yolk and the firewater gradually until you get a homogenous and well mixed dough. This process can take up to 45 minutes.
  • Stretch the dough and cut it into small pieces shaped like pillows. Fill these pieces with the filling you made earlier.
  • Fry the pieces in very hot oil and then dip them in sugar and cinnamon.
