Garnished Feinted LoinThis rimmed Feinted Loin recipe is a great way of making use of different types of meat. It is easy and simple to make.

Ingredients:

  • 21.1 ounces (600 grams) roasted and fresh beef, grinded in a machine. You can use leftovers.
  • 3.5 ounces (100 grams) grinded lean pork
  • 1 finely chopped onion
  • Parsley, pepper and nutmeg to your taste
  • 2.46 ounces (70 grams) lard
  • 1.76 ounces (50 grams) bread crumbs
  • 1 bread dipped in milk
  • 1 spoon flour
  • 2 eggs
  • 3.5 ounces (100 grams) margarine
  • 3 garlic cloves

Ingredients for the garnish:

  • 7 ounces (200 grams) peeled or frozen peas
  • 2 turnip heads
  • 21.1 ounces (600 grams) carrots
  • 2.6 pounds (1 kilo) potatoes

How to make Garnished Feinted Loin:

  • Put one chopped garlic clove, one onion and about 1.7 ounces (50 grams) of margarine in a pan. Braise until the ingredients turn slightly brown.
  • Add the grinded meat with half the bread crumbs, the bread dipped in milk (it should be drained), the flour, the parsley and the eggs to the garlic and onion braise. Mix everything very well.
  • When the ingredients are all well mixed and turn into a homogenous dough, season it with salt, pepper and nutmeg to your taste.
  • Roll the dough. The breadcrumbs will help you to achieve the final cylindrical shape.
  • Then, grease a baking tray with the lard and place the meat roll in it.
  • Heat the rest of the lard and pour it on top of the meat so it doesn’t get too dry. Put the meat roll in the oven at medium temperature for 30 to 40 minutes. Sprinkle the roast with white wine occasionally.
  • Meanwhile, mix 1 spoon of breadcrumbs with 2 finely chopped garlic cloves and chopped parsley.
  • When the meat is roasted, powder it with the previous mix and put it in the oven to cook a little for 3 minutes. The previous mix is optional, but it will provide a great flavour to your roast.
  • Cut the carrots and the turnips into pieces. Cook them and then drain them. Do the same with the peas.
  • Peel and cut the potatoes into thick slices and fry them. Season them with fine salt.
  • Dip the carrots, the peas, the turnips and the potatoes slightly and individually in a little bit of hot margarine in a frying pan.

The Garnished Feinted Loin is a simple and cheap dish without losing its refinement.
