Meat Croquettes

Meat This recipe, Meat Croquettes, serves 4 people and it often delights children. If want, you can make this recipe in bigger amounts and freeze the croquettes. This way, you will have them ready to cook any time you want.


  • 4 tablespoons (2.1 ounces / 60 grams) of margarine
  • 1 garlic clove, finely chopped
  • 1 bay leaf
  • 1 small onion, finely chopped
  • 4 tablespoons (2.1 ounces / 60 grams) of wheat flour
  • 2/3 cup (4.95 fl.oz / 1,5 dl) of milk (you can also divide this amount into half milk and half stock meat stock, or use only meat stock)
  • 7 ounces (200 grams) of minced beef
  • 2 eggs
  • Salt, pepper and nutmeg to your taste
  • Breadcrumbs to wrap the croquettes
  • Frying oil

How to make Meat Croquettes:

  • Put the margarine, along with the garlic, the onion and the bay leaf in a pan. Let it cook until it turns slightly yellow and stir it every so often so it doesn’t burn.
  • When the onion is yellow, add the flour and, at the same time, stir everything until all the ingredients are merged. Never stop stirring over low heat while you add a drizzle of olive oil and very hot milk or meat stock. Keep stirring until this mixture unsticks from the bottom of the pan.
  • Add the minced meat, mix it well and season it with salt, pepper and nutmeg. Keep stirring for another 1 or 2 minutes.
  • Remove from the heat and add one beaten egg (drop it slowly) and stir it well.
  • Then, put it back on heat and keep stirring until it forms a ball and unsticks from the bottom of the pan.
  • Put the content in a tray or a plate and cover it with greaseproof paper. Let it cool. (If you keep this dough in the fridge, it can last up to a week).
  • After cooling it, slice it in small pieces and model the croquettes to your taste.
  • Dip the croquettes in beaten egg and then in breadcrumbs. After dipping the croquettes in the breadcrumbs, you should smooth them so that the bread sticks to them better.

To fry the croquettes, you should leave the oil heat well so that they don’t become soft and ugly or even burst.

You can use rice or potatoes and salad as a side dish.
