Orange Bavarois

Orange-Bavarois-zrOrange Bavarois is a delicious and fresh recipe! It’s difficulty is medium, so anybody will be able to make this recipe, and you certainly won’t regret it!


  • 1 lemon zest
  • ½ litre milk
  • 5.29 ounces (150 grams) powdered sugar
  • 1 vanilla pod
  • 8 egg yolks
  • 12 colourless jelly leaves
  • 1 tablespoon corn flour
  • 5 decilitres cream
  • Butter to grease
  • 1 decilitre Orange liqueur
  • Orange corcles and mint leaves to use as decoration

How to make Orange Bavarois

  • Start by placing the milk, the lemon zest and the vanilla pod (open in half) on heat and wait until the mix boils. Meanwhile, remove three tablespoons of sugar and put it on the side to sprinkle the cream later. Mix the rest of the sugar with the egg yolks and the corn flour. Soak the jelly leaves in cold water.
  • Add hot milk to the egg yolk mix, very carefully, and don’t stop stirring. Then, place the mix on heat to thicken it (don’t stop stirring). When this is done, remove the mix from heat and add the drained jelly leaves. Stir the mix until the jelly dissolves.
  • On the side, mix the cream until it turns into whipped cream. Then, add the sugar you had left on the side earlier and mix it a little more. Now, add the liqueur to the egg yolk mix and then add a little whipped cream. Mix everything very well without stirring, until you get a homogenous cream.
  • Now, grease a baking ring with butter and place it on top of a plate. Then, pour the dough you made in the centre. Put the dish in the freezer until it turns solid.
  • After unmoulding the bavarois, decorate it with the rest of the whipped cream and the orange circles.
