Ovar’s Own Sponge Cake (Portuguese recipe)

Ingredients:

  • 5 eggs
  • 12 egg yolks
  • 4.4 ounces (125 grams) sleeved flour
  • 8.8 ounces (250 grams) sugar
  • Drawing paper

How to make Ovar’s Own Sponge Cake:

  • Start by lining the bottom and sides of a smooth and round mould with drawing paper (you can buy it on any stationery).
  • Then, mix the egg yolks with the eggs and the sugar until you get a fluffy and bulky cream.
  • Next, add the flour very carefully. Put the dough in the mould and then put it in the oven at a medium temperature.

The Sponge Cake should be slightly undercooked.
