Portuguese Mashed Spinach with Turnip Greens and Boiled Eggs Recipe

  • 3.3 fl. oz (1 dl )of olive oil
  • 2,78 pounds (1,250 kg )of turnip greens
  • 1 tablespoon filled with wheat flour
  • Salt, pepper and nutmeg
  • 2 smashed garlic cloves
  • 1 teaspoon of vinegar
  • 4 boiled eggs

How to make mashed spinach with turnip greens:

  • Start this recipe by thoroughly washing the turnip greens and then cook them with no lid on, with plenty of water seasoned with salt. When the turnip greens are ready, drain them very well and mash them.
  • Place a pan on the stove with the garlic cloves and the olive oil and cook them until they turn slightly yellow.
  • Then, remove the garlic cloves, put the turnip greens mash on top of the olive oil and stir it well. Spread the flour on top of it and keep on stirring. When the mix starts bubbling, leave it to cook for another 2 minutes.
  • Then this time is up, remove the pan from the heat and season its content with pepper and nutmeg, check the salt and add vinegar. If you want your mashed spinach to be thicker, add milk until you achieve the consistency you want and let it boil.
  • Meanwhile, boil the eggs and, when you serve the mashed spinach, slice them in quarters and decorate the dish.

Tricks and tips: If you’re not serving the mashed spinach as soon as you finish it, cover it with paper greased with olive oil and, whenever you wish to serve it, heat it and stir it so it doesn’t stick to the pan.
