Ingredients for the dough:

  • Jelly to brush the cupcakes
  • Dough
  • 4.4 ounces (125 grams) of sugar
  • 4.4 ounces (125 grams) of butter
  • 1 egg
  • 8.8 ounces (250 grams) of flour

Ingredients for the filling:

  • 4 egg yolks
  • 1/2 a can of condensed milk
  • 6.6 fl.oz(2 decilitres) of milk
  • Zest from half a lemon
  • 3.3 fl.oz (1 decilitre) of sour cream

How to make Portuguese Yolk Cheese Cupcakes

  • Start by beating the butter and the sugar very well until you can’t feel it grainy.
  • Then, add the egg and the flour. Knead everything very well and spread the dough until it’s around 0.12 inches  (3 millimetres) thick.
  • Use a pastry cutter with a 3.5 inches  (9 centimetres) diameter to cut the dough in circles, thus cutting 6 cupcakes shapes.
  • To make the filling, mix all the ingredients very well with a metal whisk.
  • Pour the filling into the molds and put it in an oven heated at 400ºF (200ºC) for around 35 minutes.
  • When the cupcakes are cooked, let them cool and unmold them.
  • Lastly, brush them with the jelly.
