  • 3.3 pounds (1.5 kilos) clean leerfish
  • 3 tomatoes
  • 2 garlic cloves
  • 2 onions
  • 28.2 ounces (800 grams) potatoes to roast
  • 30 centilitres white wine
  • Olive oil, bay leaf, parsley, salt, pepper to your taste

How to make Roasted Leefish:

  • Start by turning the oven on at 350º F (180º C). Meanwhile, prepare the fish. Make two cuts in the leerfish’s back and place it in a baking tray.
  • Then, wash the potatoes and the tomatoes and cut them in halves. Cut the onions into circles and laminate the garlic.
  • Put all the ingredients in the baking tray around the leerfish and sprinkle them with white wine and olive oil. Put some bay leaves on top of the leerfish to give it some taste and season it with salt and pepper.
  • Once all this is done, put the baking tray in the oven, pre-heated at 350º F (180º C) for about 35 minutes. While the fish is cooking, sprinkle it with the sauce. If you think it’s necessary, you can also sprinkle it with some white wine.
  • When the 35 minutes are up, remove the baking tray from the oven and decorate your dish with a little parsley.
