Roasted Pork

Roasted PorkRoasted Pork is yet another way of making roasted pork, but this time you will use small potatoes and spouts.


  • 26.4 ounces (750 grams) clean pork to roast
  • white wine
  • salt, pepper, paprika
  • 3 garlic cloves
  • 1 onion
  • 3.5 ounces (100 grams) lard
  • 2.6 pounds (1.2 kilo) small potatoes
  • 1 small bunch of spouts
  • 0.5 decilitres olive oil

How to make Roasted Pork:

  • Start by washing the potatoes and cook them very well, without cutting them or removing their skin, in water seasoned with salt.
  • When the potatoes are cooked, wait until they cool a little and remove their skin.
  • Then, season the pork with salt, pepper, white wine and paprika. Put the pork in the oven to roast with half of the lard.
  • Sprinkle the pork every now and again with the fat produced during the roasting process. When the pork is almost fully roasted, add pieces of onion and a smashed garlic clove. These ingredients are added almost at the end of the recipe so that they do not get burnt.
  • Don’t forget to sprinkle the pork while roasting, otherwise the meat will be too dry.
  • Pour the rest of the lard into a frying pan, heat it and then add a smashed garlic clove, a little of paprika and dip the potatoes in this mix until they turn golden. Drain them if you find it necessary.
  • Cook the sprouts in boiling water seasoned with salt.
  • Drain the sprouts very well and heat the olive oil. Add a smashed garlic clove (which you should remove after it turns slightly brown), then fry the sprouts in this mix. Check the seasoning.
