Roe with olive oil recipe

Roe olive oil recipeThis recipe is very pleasant for those who appreciate roe. It’s very easy and convenient.


  • 1 onion
  • 2.2 pounds (1 kilo) potatoes
  • 5 garlic cloves
  • 2.2 pounds (1 kilo) codfish or white fish
  • pepper
  • salt
  • 1.5 decilitres olive oil
  • 1 bunch of parsley
  • 1 tablespoons vinegar

How to make Roe with olive oil:

  • Start by washing the potatoes very well (without removing their skin). Season them with coarse salt and put them in the oven at 400ºF (200ºC).
  • If you prefer, you can use a clay baking tray and put the onion – cut into circles in it. Put the smashed garlic on top of the onions in order to produce more flavour.
  • Season the mix with salt and pour olive oil on top of it. Put the baking tray in the oven for 40 minutes.
  • Meanwhile, press the potatoes until they open and add them to the roe when it’s cooked. Add the vinegar and mix it very well.

Use parsley bunches to decorate the dish.
