Rolls Cake with egg yolk cream Recipe

Rolls Cake-Rolls cake with egg yolk cream are the most renowned and known cakes in Azeitão, Portugal.

Their ingredients are essentially egg yolks, sugar and water and they have a slight lemon and cinnamon flavour.Rolls cake with egg yolk cream from Azeitão are a good example of Portuguese confectionary.

Ingredients for the rolls:

  • 7 ounces (200 grams) sugar
  • 8 egg whites
  • 10 egg yolks
  • Butter and margarine for the baking tray
  • 1.41 ounces (40 grams) flour
  • Powdered sugar to your taste

Ingredients for the filling:

  • Powdered cinnamon to your taste
  • 2 teacups egg yolk cream

Start by turning the oven on at a 400ºF (200ºC).

Then, grease a baking tray with butter and linen it with greaseproof paper. The paper should also be greased with butter and powdered with flour.

Meanwhile, beat the egg whites stiff and add the sugar gradually while you’re doing it. Make sure the egg whites are quite stiff and that the ingredients are well mixed. Then, carefully add the flour.

Once the dough is ready, spread it on a wooden tray until it is even. Place the tray in the previously heated oven for 12 minutes.

Once you remove the dough from the oven, powder it with powdered sugar and unmould it into a kitchen cloth.

Remove the greaseproof paper and wait until the dough cools. Then, spread the egg yolks cream on the dough and powder it with powdered cinnamon.

The next step is to roll the dough and to cut it into small rolls. Put the rolls in the fridge.

Egg Yolks Cream recipe (filling)


  • 1 lemon peel
  • 6 egg yolks
  • 150 millilitres of water
  • 5.29 ounces (150 grams) sugar

Start by mixing the water, the sugar and lemon peel in a pan and then place it on heat until the mix turns into a syrup. Wait until it cools.

On the side beat the 6 egg yolks and then, slowly and gradually add the syrup.

Place this mix on heat and stir it every now and again until it thickens and you get a cream.
