Sweet Almond and Squash Recipe

Sweet Almond and Squash RThis is a traditional Portuguese dessert, so of course it is delicious! Try it, you won’t regret it!


  • 17.6 ounces (500 grams) sugar
  • 8.8 ounces (250 grams) ground blanched almonds
  • 2.5 decilitres water
  • 6.3 ounces (180 grams) figleaf gourd jam
  • 15 egg yolks
  • 2.11 ounces (60 grams) flour
  • 1 teaspoon powder cinnamon
  • 1.05 ounces (30 grams) butter
  • flour to powder
  • butter to grease
  • powdered sugar to powder

How to make sweet almond and squash

  • Start by boiling the water with the sugar for 3 minutes, then remove it from heat. Next, add the figleaf gourd jam, the almonds and the flour.
  • Place the mix on heat again for about 1 minute and stir it continuously while it cooks.
  • Remove the pan from heat, add the beaten egg yolks, the softened butter and the cinnamon.
  • Place the mix on heat once again and stir it until it cooks and it starts to thicken.
  • Meanwhile, grease a baking dish and linen it with greaseproof paper. The paper should be greased and powdered with flour.
  • Pour the mix in the baking dish and then in the oven at 383ºF (195ºC) for about 30 minutes.

After you unmould the cake, powder with powdered sugar.
