Tanoeiro’s Sardines

 tanoeiro sardinesThis recipe is quite easy to make and it’s a nice way to cook sardines.


  • 6 1/2 tablespoons (3.3 fl.oz / 1 dl) of olive oil
  • 2 onions
  • 1 garlic clove
  • 12 sardines
  • 1 bay leaf
  • 10 tablespoons(4.95 fl. oz / 1.5 dl) of white wine
  • 1 red or green pepper
  • 1.33 pounds (600 grams) of ripe tomatoes
  • 1 bunch of parsley
  • Flour to powder the sardines
  • Salt and pepper to your taste

How to make Tanoeiro’s Sardines Recipe:

  • Start by gutting the sardines, washing them very well and seasoning them with salt and pepper.
  • Put the olive oil, along with the gridded garlic clove, the sliced onions, the bay leaf and the sliced red or green pepper in a pan.
  • Braise it in medium heat and stir once in a while so it doesn’t stick. When the ingredients start to get slightly cooked add the white wine and the sliced tomatoes.
  • Season it with salt and pepper.
  • Let it cook for another 8 minutes to increase the taste.
  • Then, put this on a tray and put the sardines, powdered with flour, on top.
  • Place it in a very hot oven for 15 minutes. After this time, remove the tray from the oven and powder the sardines with chopped parsley.

You can use boiled unpeeled potatoes as a side dish to the sardines.
