Trás-Os-Montes’ Own Roasted Codfish

Roasted CodfishThis Trás-Os-Montes’ Own Roasted Codfish is a traditional Portuguese recipe. It’s very easy to make and delicious!


  • 4 slices of gammon
  • 4 codfish loins
  • 2 onions
  • 2 garlic cloves
  • 1.5 decilitres olive oil
  • Peeled boiled potatoes

How to make Trás-Os-Montes’ Own Roasted CodFish

  • Start by boiling medium sized potatoes. They should be whole and skinned.
  • Then, soak the cod fish very well.
  • Drain it and make a few cross-cuts so that you can fill the holes with the gammon. When the potatoes are cooked, peel them.
  • In a large tray, spread the onions (cut into circles) and put the cod fish loins on top of them.
  • Put the potatoes on the edges of the tray.
  • Spread onion circles, garlic cut into blades and, lastly, the olive oil on top. Put the tray in the oven. Every once in a while, sprinkle the dish with its own olive oil.
  • When the ingredients start to turn slightly brown, it’s time to serve your dish.
