Watercress Soup with Eggs

Watercress Soup with EggsWatercress soup is a very cheap, savoury and quick recipe and, according to nutritionists, it can be included in your menu if you’re trying to lose weight.

Ingredients, for 4 people, you will need:

  • 2 Boiled eggs
  • 1/2 beef or chicken stock cube
  • 1.1 pound (1/2 kg) of potatoes
  • 1 leek or 1 onion
  • 4 tablespoons (2.1 ounces / 60 grams) of margarine
  • 1 bundle of watercress
  • Salt to your taste

How to make Watercress Soup with Eggs:

  • First, pick a bundle of watercress, wash them very well and place them in cold water.
  • Peel the potatoes, slice them in small cubes and place them in cold water as well.
  • Wash the leek very well and slice it in thin circles directly into the pan, then add the margarine to braise, but don’t let it cook for too long.
  • Add the potatoes, stir it, cover the pan and let it cook for about a minute.
  • Pour water into the pan, along with the half stock cube and let it boil for 5 minutes.
  • Lastly, add the watercress (make sure they don’t have any water in them) and let it boil for 15 to 20 minutes.
  • Don’t forget to check the seasoning (salt and others you may want to add),
  • The eggs may be scattered between the soup and the plates or on a side plate.
